I was shopping at Kroger the other day and you know where they have that healthy section of the store? Well I was actually looking for “cheese” to put on my “burger” (haha! Everything is getting ” ” marks because it wasn’t real cheese or a real burger, which I guess is debatable). Anyway, I saw this BBQ jackfruit from the Jackfruit Company. I was intrigued because I had been wanting to try jackfruit, but didn’t make the purchase. Well a few days later, I was at Publix picking up some tofu and that same jackfruit BBQ was right there staring at me in the face so I picked up the bag and checked the ingredients. I was satisfied and threw it in my basket.
The instructions said to cook it on the stove for 5 min. I think there were microwavable options too, but I prefer the stove. Bigger mess. I considered doing tacos, but eventually the sandwich ended up winning that fight. This was SUPER easy to make and will satisfy even the average meat eater.

Peel, wash, then chop cabbage
Start with the bun, bbq, pickles, then cabbage. Plate the fries.
