My poor food blog has been SO neglected. I’m not even going to make excuses because I’ve just been purely lazy. I have literally everything I need to make this successful, but I throw my blog on the back burner because my photography pages take priority. Anyway, every since Justin has sort of been vegan-ish, I started exploring some new recipes. This burrito bowl is definitely one of my favorite things I’ve ever made and it is SUPER easy.
I cooked this with the idea that I would have leftovers and I could grab it and heat it up as needed… Here we go!
2 cups of uncooked basmati rice (or rice of your choice)
1 red bell pepper
1 green bell pepper
3 cloves of garlic
1 can of black beans
1 package of extra firm tofu
1 tablespoon of avocado oil
a few drops of liquid smoke
dash of salt and pepper
1-2 tsp smoked paprika
1-2 limes (each bowl use about half a squeeze of lime)
Frank’s RedHot or Tabasco Chipotle Pepper Hot Sauce if you like more of a smoky flavor
1 container of guac OR make your own with the ingredients below.
2 ripe avocados
1/2 a lemon
2 tbs finely chopped red onion
2 tbs fine chopped cilantro
dash of salt and pepper
Get the rice going first (make sure to set the timer) and then pull out a sauté pan. Put some avocado oil in the pan, turn the stove to medium, and then added the chopped garlic, bell peppers, onion, dash of salt & pepper, a tsp or 2 of smokes paprika, and then a few shakes of liquid smoke. The veggies should be chopped like they are for fajitas. Just stir every once in a while to avoid burning.
While the veggies are sautéing, drain and lightly press your tofu to get most of the liquid out. Cut it into about 1/2 in cubes and set aside until the veggies are done (10-15 minutes).
If you are still waiting on your veggies to finish, go ahead and put the avocado in the bowl, add the red onion, cilantro, squeeze of half a lemon, and a dash of salt and pepper. Mix that up and set aside.
By now, your veggies should be done so turn the stove off and put them in a container. Put a little drop of oil back in the pan, stove back on medium, and then add the tofu. Season with salt and pepper and then sauté it for about 10-15 minutes, stirring every once in a while. While that is sautéing, drain and rinse your black beans.
Once everything is ready, grab a bowl and put a little over half a cup of rice, add a couple spoonfuls of beans, tofu, guac, and sautéed veggies. Squeeze half a lime over everything and then top with your favorite hot sauce. You can also do salsa or pico.
