“I really hope this tastes good” is a thought that runs through my head as I’m stirring the pot to a new recipe. Let me be the first to tell you that I am not a chili fan. I’ve never been a chili fan and to be quite honest, I’m not sure why I decided to give Whole 30’s classic chili a try, but I am SO glad I did!
Here is a quick overview of what you need to purchase from the store. I chose Pacific broth because it was gluten free and organic. Same thing for the Pomi tomatoes.
I always check the ingredients of EVERYTHING I buy now because there are always hidden sugars and corn syrups in everything!
And of course I had to line up the pretty veggies before chopping them up…
Now for the meat… You can use turkey, chicken, beef, whatever you want! I chose this bison beef that I picked up from Costco. I think I paid right under $20 for 2 packs, but I think for bison meat, that is a pretty good deal. What I liked about this Great Range Brand is that it was 90% lean and raised without antibiotics and hormones.
I can’t always make it to the market on Saturdays to pick up local meat since I am a wedding photographer, but if you read my last post, you’d know that I am quite happy with the selection Costco offers! I like to stick the extras in the freezer until needed.
So the recipe had me starting out by browning the beef then setting it aside. Once I did that, I left the fat in the pan and threw in the onions and spices. After the onions cooked for a few minutes, I threw it the rest of the ingredients (including the meat). It took about an hour to simmer, but once it was finished, I plated it and topped it with some green onions.
*PRO TIP* I keep a giant bag of chopped green onions in my freezer and pull them as needed. This saves so much time and I always have chopped onions on hand!
Guys… I really wasn’t expecting this to taste as good as it did, but it truly filled a hole in my heart so now I’m headed back to the store to get more bell peppers so I can make this again! What a tasty and SUPER healthy meal! Also, no nuts, corn, soy, dairy, etc! Very allergy friendly! Please give this a try and tell me what you think!
1 pound ground meat
3 cloves of garlic
1 tsp cumin
1 tsp chili powder
1/2 tsp paprika
1/2 tsp mustard powder
1/2 tsp salt
1 red bell pepper
1 green bell pepper
1 can diced tomatoes
2 cups of beef broth
- Brown the meat in a large pot or skillet.
- Set meat aside, leaving fat in the pot and then add the onions, garlic, cumin, chili powder, paprika, mustard powder, and salt. Cook for about 5 min.
- Add the bell peppers, tomatoes, broth, and meat to the pot and heat to boil. Once it starts to boil, reduce the heat to low and allow the food to simmer for 1 hour.
- Top with green onions and enjoy!
